ESCONDIDINHOS IN PARATY
Escondidinhos, originally from Pernambuco, is a dish consisting of a minced meat layer, hidden by a mandioca or macaxeira purée layer and grated with cheese. Glauçia, Paraty's Mediterrani chef, serves it with fried bananas and the indispensable rice and feijão. It is a very popular dish in North East Brazil.
